Hi
There is a rich Jewish history in Spain but not that much physical evidence is left. Spain was a center of the Jewish world for a few centuries in medieval times. Here is a link to a site with a lot of information about Jewish Spain including Jewish Spain today. It has lists of synagogues, organizations and sites in different cities: http://www.kosherdelight.com/Spain.htm. You can get some ideas about Jewish sites from the itineraries of Jewish tours in Spain. Here are some tours that I was able to find and I am sure there are more. AJCongress at http://www.ajcongresstravel.com/tour.asp?PageNumber=130 is an upscale and experienced operator and has a tour to Spain which emphasizes Spain's Jewish legacy. Magical Spain at http://www.magicalspain.com/tours/jewish_frameset.htm is a specialty travel operator and they also have a Jewish tour of Spain. Here is a link to a Jewish tour of Portugal: http://www.saranjan.com/portugalsephardic.htm.
Good Luck

Go to TOLEDO! Near Madrid. There I saw the most beautiful religious building I have ever seen ... inside a Synagogue. BTW, there are at least 3 Synagogues in Toledo. jahason is right in that there is an awful lot of Jewish history in Spain - unfortunately, little of it is left in any tangible form that can be found and appreciated by visitors.
The other thread has some links about finding Sephardic monuments, synagogues and museums in Toledo.
But does anyone have any real advice on where one should go in Cordoba? You should find a lot of Jewish history. Its a period when Muslims and Jews used to live in peace. A rabbi on an Israeli tv programme described this period under Muslim rule in Spain as the golden age of Judaism in Europe. Following the inquisition many Spanish Jews sought sanctuary amongst the Muslim rulers in Istanbul. To this day there is a Jewish community in Istanbul which are histroically of Spanish origin.
Not many in Toledo, Ohio though I presume. :p
