I am in the Christian bucket (the other "buckets" being Judaism and Islam) and went to Israel last year. A friend and I spent five nights in Jerusalem -- one of those nights was over Shabbat.
Saturday morning I could not find an espresso to save my life! Rooms were cleaned AFTER sundown. How does ANY thing get done in Jerusalem. It was fascinating! I kept wondering if every Shabbat was like this. And I believe Shabbat falls every week on Friday sundown to Saturday sundown.
It would be like Christmas here in the States -- every shop, every restaurant, every bar closed -- streets are empty -- WEEKLY.
Since I have been back I've quizzed all my Jewish friends about their faith. In the US it's difficult to be observant, in New York area, it's a bit easier. One oddity about this (at least for me), is that is a day LH flies a 747 jumbo into TLV. Wouldn't that be the one day to run a leaner aircraft?
Actually LH has 2 flights a day into TLV from FRA, 1 is a 747 the other A-340-600 (I believe).
Even if LH didnt have 2 wide-bodys flying in on a Daily basis , the reason they would use a 747 on Sat is cause LY doesnt fly and there is tremendous demand for the flights. so why doesnt all the Non-Israeli carriers follow as well? I guess they have limited amounts of Wide-bodys and to put it on TLV for 1 day a week will interfere with their reg flights. also most Countries do not have a really good connecting system.
Carriers with Wide-body action into TLV are , LY (of cause), CO,Israir (an Israeli Carrier) BA,LH and Swiss (1 of the 2 flights to ZRH). AZ,AF have 2 flights a day and since most agreements are tied to the # of seats that each Countrys Carrier can fly in I guess they decided either cause they ahve limited Wide-bodys or in order to offer different flight times to use Narrow-bodys usually the A-320 is the plane that is used. I'm in my late 20s, and I'd say my parents (and grandparents esp) generation had it much harder. In big cities, people usually have some concept of what a religious Jew is, and unless there is a direct impact on the job- like requiring work on Saturdays, I think employers are generally amenable to it. I rarely hear about situations these days like what happened in the 60's in LA when my father was forced to take a written exam on Yom Kippur eve, and he just put his pen down as the holiday started, and walked out, getting a "C." I have many, many religious friends who work all over the country. Some have to work Sundays to make up for missing work they could have accomplished on Friday nights or Saturdays, but rarely have they faced any serious discrimination.
The sad thing is the cases I've encountered with the worst treatment are, most often, Jewish bosses that are less religious and have some sick psychological reason to make their more religious counterparts' lives more difficult.
The only issue I've faced, besides the possibility (though I doubt it) of not getting a job due to my head covering, was when I applied to teach English in Japan. Instead of telling them what I knew they wanted to hear, I was tremendously up-front with issues I might have, especically concerning random placement anywhere in the country. I did not get the job, but I expected that, and did not want to suprise them after placement. Again, I didn't feel discriminated against, just knew it would influence their decisions.

Be upfront with your boss.....ahead of time! Don't walk into his office 24h before and say you need the day off!
I usually print out a list of dates about 10 months in advance with all the big ones (RH,YK,PE,SH,SU) and then a list of makeup days (basically Sundays following).
Have only received positive feedback from this approach.

I've only been there once however locals tell me over time it's becoming less and less strict even in Jerusalem.
